Brioche with Almonds (Brioche aux Amandes)

Flour' Bakery’s Brioche au Chcoolat is a favorite in my household. Even my attempt to make a mini version of these popular buns failed to slow down the rapid consumption of these treats. I often wondered if this same base recipe would do well with flavors other than chocolate. Of course, it does! Keep the base dough recipe and pastry cream intact, I added toasted slivered almonds in the place of chopped chocolate, reserving a few for garnish to allow easy identification. The result was fantastic, with great texture and flavor. Next time, I might try sliced almonds instead of slivered to offer a more delicate texture.
